I'll try to answer what I can.

The cooling system is under pressure whenever the car's on...check it with the car off and cold, it's the only way you'll get a good reading. Chances are with all that blowout you've now got a bubble in there somewhere, and the vacuum from it caused the hose to shrink down. Get some more antifreeze [remember to dilute it if you didn't get premixed, instructions are on the jug], fill it slowly with the car off. It may take a bit to bubble down and work its way through the motor, so be patient and top it off whenever it goes down. After that, put the cap on all the way, run it for a few minutes to make sure there's no bubbles in the block, let it cool down, and repeat until it's full when opened. Then fill the overflow tank to the 'cold' line.

Blue smoke is oil, not water (black is fuel, and white is water); Unfortunately I don't know much about the SOHC, so you'll have to wait for one of the other guys to poke in; I'm not sure where the common 'oil leaks into the motor' points are. A compression/leakdown test would show whether it's getting in past the rings, but that's a decent amount of money when it could be other things.
