So I'm biting the bullet and I'm going to purchase the Pioneer P2300BT model thanks to all the advice that has been given. But I do have 4 questions.
1). Am I going to need any harnesses or brackets for the unit or is it a straight slide in simple process other than wiring?
2). I also want to retain the factory controls on the steering wheel so what will I need?
3).As far as the stock amplifier is concerned will there be any problems with the installation.
4). Lastly I'm being offered the unit plus installation for 299.00 in Miami Florida would you guys consider that a good deal?
Sorry for all the questions, but I was always taught "Organization is the lazy man's way of working".

Well here are some answer for you:
1) You will need the iso-mounting brackets off of the stock radio, so provided you have a stock radio that will not be a problem.
2) To retain factory steering wheel controls you need an external interface like this one:

3) If your car is a second gen you can easily retain the amp with this harness:

If your car is a first gen I don't believe you will want to integrate the stock amp.
4) As for the price it appears to be a model year or two old so I can't really find any specs on it. However $300 for an indash double din unit with dvd capability is at worst a fair deal so I wouldn't be too stressed about it.

Mines is a 93 so what would I have to do as far as the Amp is concerned I do have a 500 Watt Boss Amp that I have never used.
Also where is the stock amp located?

Install it yourself, its an easy install... I installed a Pioneer BT3300 into my 3000gt and it was so simple... It takes about 5-10 minutes of work that's it, all you basically have to do is take off the trim piece that surrounds the radio and your there. By far the easiest head unit install I have EVER done.

Most 93' cars had the amp built into the radio, so there wouldn't be an external amplifier. For reference though the stock factory amp locations were behind the radio in the center console on 1st gen cars and under the passenger seat for 2nd gen cars.
As for using an aftermarket amp, that is totally up to you. However you will need an amp install kit to hook everything up. Given that the amp is a 500w amp I would be suprised if it was a 4-channel class A/B amplifier, it is more likely a 2-channel or mono amp designed to power a subwoofer.

I checked my amp and you were correct it is only a 2 channel amp. I do know that my car does not have the infinity system. So would I need an aftermarket amp for this head unit?
